Sweet Chilli Chorizo Chicken

This is one of mine and Will's all-time favourite meals. My awful food photography does not do it justice but believe me, once you try this, it will become a regular, hopefully anyway.

I got the inspiration from Will's sister who had seen a recipe online, I'm not sure exactly where. I have since then had many attempts and perfected exactly how we like it.

It is essentially just vegetables, chicken and chorizo, smoothered in sweet chilli sauce and shoved in the oven. Fool proof.

You will need...

  • Sweet chilli sauce
  • Chicken
  • Chorizo
  • Two peppers
  • Two red onions
  • Two courgettes
  • Two medium sweet potatoes
  • Roasting tin

Start off by pre-heating the oven to 200 degrees °C.

Then chop up all your veg into quite large chunks. It doesn't have to be neat. Pop them all into your roasting tin.

Pour over a liberal amount of sweet chilli sauce. Now slice your chorizos out on top of the veg. Then cut up your chicken into smallish chunks. I always cut up the chicken last as I worry about contamination. Then pour on another liberal amount of sauce. I like to do it in two layers so everything is coated in sauce.

Also it might take a few attempts plus a bit of trial and error, to find the right amount of sauce ratio for you. Will and I like it extremely saucy!

Cook for about 45 minutes, then take it out of the oven and give it a good stir. Then pop it back in and cook for a further 45 minutes. I personally like it a little over cooked as I love the crispiness but it is up to you, just make sure the chicken is thoroughly cooked and piping hot in the middle.

Just as it is almost done, about 20 minutes before. Peel and chop up your sweet potato into chunks. Boil some water in a saucepan and cook the sweet potato through.

Mash your potatoes; you can just leave them like this, I always add a teaspoon of honey and a dash of sweet chilli sauce just to give it a bit more flavour.

Now you can serve!

This is enough to feed about four adults but if there is only two of you, like us, you can keep some for lunch the next day! Also these are my crochet placemats form last week.

It's also cheap, this meal for four only cost £12! And because it is so easy to prepare, you can spend most of your time with your guests. It can be a weekday meal as a treat to keep you going through the week.
